  • 1 medium onion, chopped
  • 2 cloves garlic, minced

  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef or vegetable broth Homemade is preferred.
  • 1 cup uncooked rice Adjust cooking times based on rice type.
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

Preparation

  • In a large pot, brown the ground beef or turkey over medium heat. Drain excess fat.
  • Add chopped onion and minced garlic to the pot, cooking until the onion is translucent.
  • Stir in chopped cabbage and cook until it wilts slightly.
  • Add diced tomatoes and broth to the pot.
  • Mix in uncooked rice, oregano, paprika, salt, and pepper. Stir well.
  • Bring soup to a gentle boil, then reduce heat and let it simmer for about 30 minutes.
  • Taste and adjust spices as needed before serving.

Serving

  • Ladle soup into bowls and add a sprinkle of fresh herbs or a dollop of sour cream if desired.
  • Serve with crusty bread or a side salad for a balanced meal.
