Ingredients
  

For the base

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes
  • 1/2 tablespoon Cajun seasoning Use a quality blend for best flavor

For the orzo

  • 1 cup uncooked orzo pasta
  • 2 cups low sodium chicken broth
  • 1 teaspoon lemon juice
  • 1 cup heavy/whipping cream
  • 2 cups cooked shredded or rotisserie chicken
  • 1/2 cup freshly grated parmesan cheese Add more for garnish if desired

Preparation

  • Heat the olive oil and butter in a large skillet over medium heat.
  • Add the chopped onion and sauté for 3-4 minutes until translucent.
  • Incorporate minced garlic and cook for an additional minute.
  • Add sun-dried tomatoes and Cajun seasoning, stirring to combine.
  • Stir in the uncooked orzo, coating it in the mixture for about one minute.
  • Pour in the low sodium chicken broth and bring to a simmer.
  • Cover the skillet and let the orzo cook for 10-12 minutes, stirring occasionally.
  • Once the orzo is cooked through, add lemon juice and heavy cream.
  • Fold in shredded chicken and parmesan, stirring until heated through.
  • Let it sit for a couple of minutes before serving.

Notes

Garnish with fresh parsley or extra parmesan cheese. Store leftovers in an airtight container in the fridge for up to three days.
