  • 1 lb andouille sausage, sliced
  • 4 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 teaspoons Cajun spice blend
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

Preparation

  • Heat a large pot over medium heat and add the sliced andouille sausage. Cook until browned, about 5-7 minutes.
  • Add the chopped onion, bell pepper, and celery to the pot. Sauté until softened, about 5 minutes.
  • Stir in the diced potatoes and Cajun spices, allowing them to combine well.
  • Pour in the chicken or vegetable broth, bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  • Add the heavy cream and cheddar cheese, stirring until the cheese is melted and the soup is creamy.
  • Season with salt and pepper to taste. Serve warm.

  • Ladle the soup into bowls and garnish with chopped scallions or fresh parsley if desired.

Notes

Let the soup sit for a few hours or overnight for the flavors to deepen. It can be stored in the fridge for 3-4 days, or frozen for up to 3 months. When reheating, add a splash of broth or cream to adjust consistency.
