Pasta and Vegetables

  • 8 ounces pasta of your choice
  • 1 pound smoked sausage, sliced Can substitute with turkey or chicken sausage for a lighter option.
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 3 cloves garlic, minced

Sauce

  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning Adjust according to taste preference for more or less heat.
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream Add more broth or cream if sauce is too thick.
  • 1 cup shredded cheese (cheddar or your choice) Mix of cheeses can enhance flavor.

Garnish

  • Chopped parsley For garnish.

Preparation

  • Cook the pasta according to the package instructions. Once done, drain and set aside.
  • In a large skillet, heat olive oil over medium heat.

Cooking

  • Add the sliced sausage to the skillet and cook until brown and crispy, about 5 minutes.
  • Add diced onion, bell pepper, and minced garlic to the skillet; cook for 3-4 minutes until softened.
  • Sprinkle in Cajun seasoning and stir to coat sausage and vegetables.
  • Add diced tomatoes along with their juices and heavy cream; stir and bring to a gentle simmer.
  • Simmer for about 5 minutes to develop flavors.
  • Introduce the cooked pasta into the skillet and stir in the shredded cheese until melted.
  • Season with salt and pepper to taste; cook for an additional 2-3 minutes until heated through.

Serving

  • Mound the pasta onto plates or into bowls, generously ladling the creamy sauce over each portion.
  • Garnish with chopped parsley and additional cheese if desired.

Notes

Can be stored in an airtight container in the refrigerator for up to three days. Reheat in a skillet and add cream or broth to revive the sauce's creaminess. Consider using rotini or penne pasta for better sauce adherence.
