Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic and sauté until soft and fragrant, about 3-5 minutes.
  • Add the chicken breasts to the pot and cook for 5-7 minutes, until fully cooked through.
  • Remove the chicken, shred it with two forks, and return it to the pot.

Cooking

  • Add the drained white beans, diced tomatoes, chicken broth, Cajun seasoning, cumin, salt, and pepper to the pot.
  • Stir to combine and bring to a gentle simmer for about 20 minutes.
  • Add the corn and cook for an additional 5 minutes.

Serving

  • Serve the chili hot in deep bowls, garnished with chopped green onions and fresh cilantro.

Notes

Store leftovers in an airtight container for up to 4 days in the fridge or freeze for up to 3 months. Don’t skimp on garnishes; they add freshness and flavor.
