  • 4 small small oranges (like tangelos) Select firm and vibrant oranges.
  • 4 cups granulated sugar Plus extra for coating.
  • 8 cups water Divided into two portions.
  • 1 bowl Ice water For cooling the slices after blanching.

Instructions
 

Preparation

  • Fill a large bowl with ice water.
  • Wash your oranges thoroughly to remove any dirt or wax.
  • Slice the oranges into 1/4-inch thick rounds.

Candying

  • In a large saucepan, bring 4 cups of water to a boil.
  • Carefully add the orange slices and boil for about 2 minutes.
  • Transfer the slices to the ice water to cool completely.
  • Discard the boiling water and return the saucepan to the stove.
  • Add the remaining 4 cups of water and 4 cups of sugar. Stir until the sugar fully dissolves.
  • Bring the syrup mixture to a boil.
  • Reduce heat to a gentle simmer and add the cooled orange slices. Simmer for 45 to 60 minutes, stirring gently every 15 minutes.
  • Use a slotted spoon to remove the orange slices and place them on a cooling rack lined with parchment paper.

Drying

  • Let the slices dry for up to 24 hours at room temperature.
  • Optionally coat the dried slices in granulated sugar before storing.

Notes

Store candied orange slices in an airtight container in the refrigerator for up to a month. Avoid any moisture to prevent spoilage.
