Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups brown sugar
  • 6 tbsp unsalted butter, melted
  • 0.5 tsp cinnamon

For the cheesecake filling

  • 16 oz cream cheese, softened
  • 0.5 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.25 cups sour cream

For the apple topping

  • 2 medium apples (Honeycrisp or Granny Smith), peeled and diced
  • 2 tbsp butter
  • 3 tbsp brown sugar
  • 0.5 tsp cinnamon
  • 1 tsp lemon juice

For the crumble topping

  • 0.25 cups flour
  • 2 tbsp brown sugar
  • 2 tbsp rolled oats
  • 2 tbsp butter, melted
  • 1 pinch cinnamon

For the caramel drizzle

  • 0.5 cups soft caramels or caramel sauce
  • 2 tbsp heavy cream

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • Mix graham cracker crumbs, brown sugar, melted butter, and cinnamon in a medium bowl until moistened.
  • Press crumb mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden, then cool completely.

Making the cheesecake filling

  • Beat softened cream cheese and granulated sugar together until smooth.
  • Add eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract and sour cream.
  • Pour cheesecake filling over the cooled crust and spread evenly.
  • Bake for 30-35 minutes until edges are set and center is slightly jiggly. Let cool completely, then refrigerate for at least 2 hours.

Preparing the apple topping

  • Melt butter in a skillet over medium heat. Add diced apples, brown sugar, cinnamon, and lemon juice. Cook for 5-7 minutes, stirring occasionally until soft.

Making the crumble topping

  • Mix flour, brown sugar, rolled oats, melted butter, and a pinch of cinnamon until coarse crumbs form.
  • Toast crumble in a skillet for 3-4 minutes or bake at 350°F (175°C) for about 8 minutes until golden.

Assembly

  • Layer apple topping over the cheesecake, then sprinkle crumble topping evenly over the apples.
  • Warm caramels with heavy cream in a small saucepan over low heat until melted. Drizzle over the pie.
  • Refrigerate for another hour before slicing.

Notes

For cleaner cuts, warm your knife in hot water before slicing. Consider serving with whipped cream or vanilla ice cream.
