Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until mixed thoroughly.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients until just combined.
  • Fold in the caramel bits or chopped soft caramel candy.
  • Use a cookie scoop or spoon to portion the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for about 10 to 12 minutes or until edges turn light golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
  • While warm, sprinkle a little sea salt on top if desired.

Notes

For varied flavors, you can add nuts, mix in chocolate chips, or incorporate spices like cinnamon. Store in an airtight container for one week at room temperature, or freeze for up to three months.
