Preparation

  • Preheat your oven to 400ºF (200ºC).
  • Lightly spray an 11×7-inch baking pan with cooking spray.
  • Place the chicken breasts evenly in the prepared pan without overlapping.
  • In a medium bowl, whisk together the Catalina salad dressing, peach or apricot preserves, and onion soup mix.
  • Pour the sauce mixture over the chicken breasts, ensuring they are generously coated.

Cooking

  • Place the baking pan in the preheated oven and bake uncovered for 40 to 50 minutes.
  • Check that the chicken is cooked through and no longer pink in the middle.
  • Remove the chicken from the oven and let it rest for a few minutes before serving.
