Cookie Dough Ingredients

  • 1 cup brown butter Brown the butter until golden brown for rich flavor.
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour Spoon and level for accurate measurement.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon chai spice mix Can be homemade or store-bought.
  • 1/2 cup chai sugar For rolling the dough balls.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a saucepan over medium heat, melt your butter until golden brown and set aside to cool slightly.
  • In a mixing bowl, combine the brown butter, granulated sugar, and brown sugar. Mix until smooth.
  • Add the eggs and vanilla extract; whisk until well combined.
  • In another bowl, mix the flour, baking soda, salt, and chai spice mix.
  • Gradually combine the dry mixture with the wet ingredients and fold until just incorporated.
  • Take small portions of the dough and roll into balls. Roll each ball in chai sugar.
  • Place the dough balls on a lined baking sheet with space in between each.

Baking

  • Bake in the preheated oven for about 10-12 minutes, until the edges are golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For a chewier cookie, remove from the oven while the centers are still soft. Consider chilling the dough for 30 minutes before baking to improve texture.
