Ingredients
  

Meat

  • 1 pound lean ground beef Can substitute with ground turkey or other meats.

Vegetables

  • 1 tablespoon olive oil For cooking the beef.
  • 1 medium sweet onion, diced
  • 1 cup freshly grated carrots
  • 1 cup diced celery
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1 pound petite gold potatoes, quartered

Broth and Dairy

  • 4 to 5 cups chicken stock Add enough to cover all ingredients.
  • 2 tablespoons unsalted butter For the roux.
  • 3 tablespoons flour To thicken the soup.
  • 1 cup milk Used in the cheese sauce.
  • 16 ounces freshly grated sharp cheddar cheese Can substitute with other types of cheese.
  • 1/2 cup sour cream Can use Greek yogurt for a lighter option.

Garnish

  • to taste freshly chopped chives For serving.

Instructions
 

Cooking the Beef

  • In a large pot over medium heat, add the olive oil.
  • Add the ground beef, season with Kosher salt and pepper, and cook until browned.
  • Remove the cooked beef from the pot and set aside.

Sautéing Vegetables

  • In the same pot, add diced sweet onion, grated carrots, and diced celery.
  • Sauté for 5 to 7 minutes until softened.
  • Add minced garlic and dried oregano. Stir for 1 minute.

Simmering the Soup

  • Return the browned ground beef to the pot with the sautéed vegetables.
  • Toss in the quartered petite gold potatoes.
  • Pour in the chicken stock and bring to a boil.
  • Reduce heat and let simmer for about 15 to 20 minutes until potatoes are tender.

Making the Cheese Sauce

  • In a separate saucepan, melt the unsalted butter over medium heat.
  • Stir in flour and cook for 1 to 2 minutes.
  • Gradually whisk in milk until thickened, then off heat, add cheddar cheese and stir until melted.

Final Assembly

  • Once soup is done simmering, stir in the cheese sauce and sour cream.
  • Mix until creamy and smooth, adjusting seasoning with salt and pepper as needed.
  • Ladle soup into bowls and garnish with chopped chives.

Notes

This soup can be customized with different meats, cheeses, and vegetables. For thicker soup, simmer longer or reduce stock amount.
