For the Cookie Dough

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips (optional)

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the all-purpose flour, baking soda, and salt. Whisk together and set aside.
  • In another large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs and vanilla extract to the butter mixture, mixing until well combined.
  • Gradually incorporate the dry ingredients into the wet mixture, mixing just until you see no more flour. Avoid over-mixing.
  • Fold in the semi-sweet chocolate chips until evenly distributed.
  • In a separate bowl, mix the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.

Assembly

  • Scoop about 1.5 tablespoons of cookie dough and flatten it in your hand. Place about 1 tablespoon of cheesecake filling in the center, and wrap the dough around the filling, forming a ball.
  • Place the cookie balls on the prepared baking sheet, spacing them adequately.

Baking

  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, ensure ingredients like cream cheese and butter are at room temperature. Chill assembled cookie balls for 30 minutes before baking to maintain shape. You can customize the cheesecake filling with crushed cookies or fruit purees.
