Main ingredients

  • 3 cups fresh broccoli, roughly chopped Can use frozen if fresh is not available
  • 2 cups cooked chicken, diced Perfect for using leftovers

Seasoning

Preparation

  • Heat olive oil in a large pot over medium-high heat.
  • Add minced garlic and sauté for about 30 seconds.

Cooking

  • Pour in chicken broth and milk, bringing the mixture to a gentle boil.
  • Add cheese tortellini and cook according to package instructions, usually about 2 minutes.
  • Stir in fresh broccoli and cook for an additional 3 minutes until tender.
  • Lower the heat to a simmer and stir in cream cheese and Parmesan until melted.
  • Add cooked chicken, mixing well and season with salt and black pepper.
  • Remove from heat and serve hot, garnished with extra Parmesan.

Notes

For a lighter version, substitute cream cheese and whole milk with Greek yogurt or a low-fat dairy alternative. Consider adding red pepper flakes for a spicy kick.
