  • 2 cups chicken broth Add more if needed to cover pasta.
  • 1/2 cup heavy cream For a richer sauce.
  • 14.5 oz fire-roasted diced tomatoes
  • 1 1/2 cups Monterey Jack cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 2 oz cream cheese, room temperature Ensure it's at room temperature for smooth melting.

Preparation

  • Gather your ingredients and prepare your cooking area.
  • In a large pot or Dutch oven, heat olive oil over medium-high heat.
  • Add sliced kielbasa and cook for about 4-5 minutes until lightly browned.
  • Add diced onion and sauté for 2-3 minutes until softened.
  • Stir in minced garlic and cook for an additional 30 seconds until fragrant.

Cooking

  • Pour in chicken broth, fire-roasted diced tomatoes, heavy cream, and uncooked penne pasta. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to a simmer for 13-15 minutes, stirring often.
  • Once pasta is cooked through, remove from heat and add Monterey Jack cheese, cheddar cheese, and cream cheese. Stir until melted and combined.

Serving

  • Serve in a large bowl or individual portions. Garnish with parsley if desired.
  • It pairs well with a fresh side salad or warm garlic bread.
