Base Ingredients

  • 1 cup cooked quinoa or rice Use quinoa for a gluten-free option.
  • 1 cup marinara sauce

Toppings

  • 1 cup shredded mozzarella cheese Reserve half for topping.
  • 1/2 cup diced bell peppers
  • 1/2 cup sliced mushrooms
  • 1/2 cup sliced olives
  • 1/2 cup cooked ground sausage or pepperoni Optional for added protein.

Seasonings

  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Garnish

  • Fresh basil For garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked quinoa or rice with the marinara sauce. Mix well.
  • Add half of the shredded mozzarella cheese and mix again until incorporated.
  • Toss in the diced bell peppers, sliced mushrooms, sliced olives, and optional ground sausage or pepperoni, and mix well.
  • Sprinkle in the Italian seasoning, salt, and pepper. Mix everything together until well combined.
  • Transfer the mixture into a greased baking dish and spread evenly.
  • Sprinkle the remaining mozzarella cheese on top.

Baking

  • Bake in the preheated oven for 20 to 25 minutes until bubbling and slightly golden.
  • Allow to cool for a few minutes before serving.
  • Garnish with fresh basil before serving.

Notes

Customize with your favorite vegetables or protein options. Store leftovers in an airtight container in the fridge for up to 3-4 days.
