Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, refried beans, and softened cream cheese. Ensure the cream cheese is mixed in well.
  • Add in the diced tomatoes with green chilies, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.
  • Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • Sprinkle cheddar cheese generously over the top, followed by tortilla chips.

Baking

  • Bake the casserole in the preheated oven for 25 to 30 minutes, or until it is hot and bubbly, and the cheese is melted.

Serving

  • Serve warm directly from the baking dish, with optional toppings like shredded lettuce, diced tomatoes, sour cream, jalapeños or hot sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months. Reheat in the oven until warmed through before serving.
