Ingredients
  

For the Chocolate Coating

  • 3 cups semi-sweet chocolate chips Melted
  • 2 tablespoons shortening or coconut oil For melting with chocolate

For the Cherry Bourbon Balls

  • ¾ cup finely chopped pecans Can substitute with walnuts or almonds
  • ¼ cup cherry juice (non-alcoholic) Can substitute with other fruit juices
  • ¼ cup finely chopped maraschino cherries
  • ½ cup butter, softened
  • 4 cups powdered sugar Divided for rolling and mixture
  • 30 pieces candied cherry halves For garnish

Preparation

  • Melt the chocolate chips with shortening or coconut oil using a microwave in 30-second bursts or a double boiler.
  • In a separate bowl, cream together the softened butter and 3 cups of powdered sugar until light and fluffy.
  • Stir in the cherry juice, chopped maraschino cherries, and finely chopped pecans until well combined.
  • Gradually add the cooled chocolate mixture to the mixture, stirring until uniform.

Chilling and Rolling

  • Cover the mixture with plastic wrap and refrigerate for 1 to 2 hours until firm.
  • Roll the chilled mixture into balls, about 1 tablespoon each.
  • Roll each ball in the remaining powdered sugar for coating.
  • Top each ball with a half candied cherry and place them on a parchment-lined baking sheet.
  • Chill the finished balls again for an additional 30 minutes before serving.

Notes

Store in an airtight container for up to two weeks in the refrigerator or freeze for up to a month. For a twist, add almond extract or try different fruit juices.
