Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the flour, baking soda, salt, ground ginger, cinnamon, and cloves. Whisk them together thoroughly.
  • In a separate bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  • Add the molasses, egg, and vanilla extract. Beat until the mixture is smooth.
  • Gradually add the flour mixture to the wet ingredients, stirring until just combined.

Baking

  • Roll the dough into small balls and optionally roll them in extra sugar.
  • Place the dough balls on a parchment-lined baking sheet, ensuring enough space between each.
  • Bake for 8 to 10 minutes, until edges are set but centers remain soft.
  • Let cookies sit on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To maintain chewiness, store in an airtight container. Consider chilling the dough for better handling if sticky.
