  • 2/3 cup light brown sugar
  • 1/8 cup white sugar
  • 1 large egg At room temperature
  • 1 tsp vanilla extract

  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 3/4 tsp ground cinnamon
  • 1/4 tsp salt

  • 1 1/2 cups quick cooking oats
  • 1 cup chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, light brown sugar, and white sugar until smooth and fluffy (2-3 minutes).
  • Add the egg and vanilla extract. Mix until fully incorporated.
  • In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  • Gradually stir in the dry ingredients into the wet mixture until just combined.
  • Fold in the oats and chocolate chips gently.
  • Chill the dough in the refrigerator for at least one hour.

Baking

  • Scoop portions of dough onto the prepared baking sheet, leaving space between each scoop.
  • Bake for about 13 minutes, until the edges are golden brown and the centers are slightly underbaked.
  • Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a delicious twist, serve warm with milk or make ice cream sandwiches with vanilla ice cream. Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months.
