  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ teaspoon vanilla extract

  • 1 cup rolled oats old-fashioned preferred
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup all-purpose flour

  • ½ cup chopped nuts (e.g., walnuts, pecans, optional)
  • ½ cup chocolate chips (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until smooth.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In another bowl, mix the rolled oats, baking soda, and salt. Gradually add this oat mixture to the wet ingredients and stir until just combined.
  • Sift in the all-purpose flour, and gently fold it in until no dry flour remains.
  • Mix in optional chopped nuts or chocolate chips if desired.

Baking

  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
  • Bake for about 10-12 minutes or until the edges turn golden brown.
  • Cool on the baking sheets for a few minutes before transferring to wire racks.

Notes

For best results, let the dough rest for 30 minutes before baking. Store cookies in an airtight container to maintain freshness. They can be frozen for long storage.
