  • 1 cup creamy peanut butter Avoid natural peanut butter.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour Measure accurately to avoid dryness.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine creamy peanut butter, brown sugar, and granulated sugar until smooth.
  • Add the egg and vanilla extract, mixing until fully incorporated.
  • In a separate bowl, whisk together baking soda, salt, and flour. Gradually add to the peanut butter mixture and stir until combined.
  • Scoop tablespoons of dough onto the prepared baking sheet, spacing them about two inches apart.
  • Using a fork, gently press down on each dough ball to create a crisscross pattern.

Baking

  • Bake in the preheated oven for 8-10 minutes or until edges are lightly golden.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a gourmet twist, drizzle cookies with melted chocolate or sprinkle with sea salt before serving. Store in an airtight container to keep them soft. Chilling the dough for 30 minutes can enhance flavor.
