  • 1 teaspoon baking soda

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 cup sugar (for rolling)

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, cream the softened butter and sugar together until light and fluffy.
  • Beat in the egg and vanilla extract until fully combined.
  • Gradually add the flour mixture to the butter mixture, stirring until just combined; avoid overmixing.
  • Scoop the dough using a tablespoon and roll it into balls, then roll each ball in the extra sugar to coat.
  • Place the sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 8 to 10 minutes or until the edges are lightly golden; the centers may look soft.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For a chewy finish, do not overmix the dough, and consider chilling it in the refrigerator for 30 minutes before baking. Store in an airtight container to maintain freshness.
