Ingredients
  

For the Soup Base

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts

Vegetables

  • 1 medium head cabbage, chopped
  • 2 medium carrots, diced

Broth and Seasoning

  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Garnish

  • Fresh parsley Optional, for garnish

Preparation

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add the finely chopped onion and minced garlic, and sauté for about 3-4 minutes until the onion turns translucent.
  • Introduce the boneless, skinless chicken breasts to the pot and cook for about 5-6 minutes until both sides are lightly browned.

Cooking

  • Stir in the diced carrots and chopped cabbage, mixing with the onions and garlic.
  • Pour in the low-sodium chicken broth, ensuring it covers the vegetables and chicken. Bring to a gentle boil.
  • Add dried thyme, oregano, salt, and pepper to taste; stir well.
  • Reduce heat to low, cover the pot, and let it simmer for about 20-25 minutes.
  • Remove the chicken breasts from the pot and shred them into bite-sized pieces before returning them to the pot.
  • Taste the soup and adjust the seasoning as needed.
  • Ladle the soup into bowls and garnish with fresh parsley if desired.
