  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken for added flavor.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 4 cups chicken broth Adjust for desired thickness of soup.
  • 1 cup heavy cream Can use low-fat cream for a lighter version.
  • 2 cups biscuit dough Store-bought or homemade.
  • to taste Salt and pepper Adjust seasoning according to taste.
  • to garnish Parsley For garnish.

Preparation

  • Heat a large pot over medium heat, add chopped onions, diced carrots, and celery. Sauté until soft, about 5 to 7 minutes.
  • Add the shredded chicken to the softened vegetables, then pour in the chicken broth. Increase heat to bring to a gentle simmer.
  • Pour in the heavy cream and season with salt and pepper to taste. Stir to combine.
  • Drop spoonfuls of biscuit dough onto the simmering broth, making sure they are evenly spaced.
  • Cover the pot with a lid and let the dumplings simmer for 15 to 20 minutes, until they puff up and cook through.
  • Once ready, remove the lid, sprinkle with fresh parsley, and serve hot.

Notes

Serve with warm dinner rolls or crusty bread for dipping. Can customize by adding other vegetables like peas or green beans.
