Ingredients
  

Vegetables and Base

  • 2 tablespoons Olive Oil
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Spinach or Kale, chopped
  • 2 teaspoons Garlic, minced

Main Ingredients

  • 4 cups Chicken Broth
  • 2 cups Shredded Chicken, cooked Can use rotisserie chicken
  • 1 package Gnocchi Usually around 16 ounces
  • 1 cup Heavy Cream Can substitute with half-and-half for a lighter version
  • 1 teaspoon Italian Seasoning
  • to taste Salt and Pepper Season gradually

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the minced garlic, diced carrots, and diced celery. Sauté for about 5 to 7 minutes until the vegetables are tender.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Add the gnocchi and cook according to package instructions, usually 2 to 4 minutes.
  • Stir in the shredded chicken, heavy cream, and spinach or kale. Add Italian seasoning and mix thoroughly.
  • Reduce heat to low and let it simmer for another 5 to 10 minutes.
  • Season with salt and pepper to taste before serving.
  • Ladle the soup into bowls and serve hot.

Notes

Consider garnishing with fresh herbs or Parmesan cheese. Pair with crusty bread or a side salad for a complete meal.
