Ingredients
  

Main Ingredients

  • 2 pieces boneless skinless chicken breasts Seasoned with salt and pepper
  • 1 tablespoon olive oil For cooking the chicken
  • 1 slice avocado, sliced Adds creaminess
  • 4 slices cheese (Swiss, cheddar, or provolone) Choose your favorite
  • 4 slices bread (sourdough, ciabatta, or your choice) Your choice of bread
  • 2 tablespoons mayonnaise To spread on the bread
  • 1 tablespoon Dijon mustard To spread on the bread

Vegetables

  • 1 small red onion, thinly sliced
  • 1 piece tomato, sliced

For Grilling

  • 1 tablespoon butter or olive oil For grilling the sandwich

Instructions
 

Cooking Chicken

  • Season the chicken breasts liberally with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook the seasoned chicken breasts for about 6-7 minutes on each side until golden brown and cooked through.
  • Remove chicken from skillet and let it rest for a few minutes.

Prepare Vegetables

  • Slice the avocado, red onion, and tomato.

Assemble Sandwich

  • Spread mayonnaise on one slice of bread and Dijon mustard on the other.
  • Layer sliced chicken, avocado, cheese, red onion, and tomato on the bread.
  • Top with another slice of bread, mayo side down.

Grill Sandwich

  • Heat skillet or grill pan and add butter or olive oil.
  • Grill the sandwich for about 3-4 minutes on each side until golden brown and cheese melts.
  • Remove, slice in half, and serve warm.

Notes

Best served fresh off the grill. Can be paired with a side salad or chips. Consider serving mini versions for gatherings.
