Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts (about 1 ½ lbs) Slice horizontally for quicker cooking.
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • Kosher salt and black pepper (to taste)
  • 3 large eggs Lightly beaten.
  • 1 cup panko bread crumbs Adds crunch.
  • ¼ cup freshly grated Parmesan cheese

For the Dressing

  • ½ cup plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Kosher salt and black pepper (to taste)

For the Sandwich Assembly

  • 4 pieces fresh croissants Preferably flaky and fresh.
  • 2 tablespoons melted butter For toasting croissants.
  • ¾ cup Parmesan cheese, divided For sprinkling over croissants.
  • 4 cups chopped Romaine lettuce
  • 2 pieces avocados, sliced Add creamy texture.
  • Hot honey (optional, for drizzling) Adds a spicy kick.

Instructions
 

Preparation

  • Slice each chicken breast horizontally into four thinner pieces.
  • In a shallow dish, whisk together the flour, garlic powder, salt, and pepper.
  • In another shallow dish, lightly beat the eggs.
  • In a third dish, combine panko bread crumbs and grated Parmesan cheese.

Cooking Chicken

  • Heat a cast iron skillet over medium-high heat and add enough oil to coat the bottom.
  • Dredge each piece of chicken in flour, then coat with egg, and finally press into the panko-Parmesan mixture.
  • Fry each piece for about 2-3 minutes on each side until golden brown.
  • Transfer the cooked chicken to a paper towel-lined plate.

Toasting Croissants

  • Preheat the broiler.
  • Slice each croissant in half and brush the insides with melted butter.
  • Sprinkle the croissant tops with Parmesan cheese and broil for 2-3 minutes.

Making the Dressing

  • In a mixing bowl, combine Greek yogurt, lemon juice, Dijon mustard, honey, and minced garlic.
  • Season with salt and pepper to taste.

Assembling the Sandwich

  • Toss chopped Romaine with the creamy dressing.
  • Layer the bottom halves of toasted croissants with crispy chicken, dressed Romaine, and sliced avocado.
  • Drizzle with hot honey if desired before topping with the croissant.

Serving

  • Serve immediately while fresh with sides like sweet potato fries or a light salad.

Notes

Wrap leftovers tightly and store in the refrigerator for up to 2 days. Reheat in an oven or air fryer for best results.
