For the dressing

Preparation

  • In a large mixing bowl, combine mixed salad greens, shredded carrots, sliced red bell pepper, sliced green onions, and unsalted cashews. Toss gently to evenly distribute.
  • In a separate bowl, whisk together teriyaki sauce, sesame oil, and rice vinegar until smooth.
  • Pour the dressing over the salad mixture and gently toss until everything is well-coated.
  • Sprinkle sesame seeds on top for added crunch and serve immediately.

Notes

This salad is best served fresh. Store leftovers in airtight containers with the dressing kept separate to maintain crispness. Revive wilting greens by rinsing in cold water before serving.
