Ingredients
  

Filling

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup refried beans
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper

Chimichanga Preparation

  • 4 large flour tortillas Make sure tortillas are pliable
  • as needed Vegetable oil for frying Enough to cover the bottom of the skillet

  • as needed Sour cream For serving

Preparation

  • Gather all your ingredients and prepare your workspace.
  • In a large bowl, combine the cooked shredded chicken, shredded cheese, refried beans, cumin, chili powder, salt, and pepper. Mix well.
  • Take one tortilla, place a generous portion of the filling in the center, fold the sides, and roll it tightly.
  • Repeat the process with remaining tortillas and filling.

Cooking

  • Heat vegetable oil in a deep skillet over medium heat.
  • Carefully place chimichangas seam side down in the skillet. Fry for 4-5 minutes until golden-brown, then flip and fry the other side for another 4-5 minutes.
  • Remove from skillet and place on paper towels to drain excess oil.

Serving

  • Serve chimichangas with sour cream and salsa on the side.
  • Add any additional toppings or garnishes you prefer.

Notes

Tortillas should be pliable to avoid cracking. Fry in small batches for best results. Can be assembled ahead of time and stored in the fridge. For healthier options, consider baking instead of frying.
