Ingredients

For the Sauce

  • 1 can cream of chicken soup Adds creaminess and provides a buttery base.
  • ½ cup mayonnaise Introduces richness; Greek yogurt is a lighter alternative.
  • ½ cup milk Helps reach creamy consistency; non-dairy options work well.
  • 1 tablespoon lemon juice Brightens and balances flavors.
  • 1 teaspoon curry powder Adds depth without overpowering spice.

Main Ingredients

  • 3 cups shredded chicken Rotisserie chicken makes this dish effortless.
  • 2 cups broccoli florets Provides nutrition; use frozen if thawed and patted dry.
  • 2 cups shredded cheddar cheese Gives melty, cheesy goodness; swap favorite cheese.
  • 1 cup breadcrumbs Ensures a crunchy topping; seasoned breadcrumbs enhance flavor.

For the Topping

  • 2 tablespoons butter Binds breadcrumbs; olive oil is a healthier substitute.

Instructions

Preparation

  • In a mixing bowl, combine the cream of chicken soup, mayonnaise, and milk. Whisk these ingredients together until the mixture is smooth. Then, add in the lemon juice and curry powder.

Layering

  • Preheat your oven to 350°F (175°C). In a greased 9x13-inch baking dish, place the shredded chicken evenly at the bottom. Distribute the broccoli florets on top.

Cheese Addition

  • Pour your creamy sauce over the chicken and broccoli layer. Use a spatula to ensure the sauce covers everything completely. Sprinkle shredded cheddar cheese on top.

Topping Preparation

  • In a small bowl, melt the butter and combine it with the breadcrumbs. Toss until the breadcrumbs are well-coated in the butter, then sprinkle this mixture over the cheese layer.

Baking

  • Place the casserole in your preheated oven and bake for about 30-35 minutes, or until the cheese is bubbly and the topping is golden brown.

Serving

  • Remove the casserole from the oven and allow it to cool for about 5-10 minutes before serving. Use a spatula to dish up generous portions.

Notes

For ease, use rotisserie chicken; don’t skip the lemon juice; feel free to experiment with different types of cheese; using frozen broccoli is acceptable if thawed and patted dry.
