  • 2 tbsp unsalted butter
  • 1.5 lbs boneless, skinless chicken breasts, sliced
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 0.5 tsp salt
  • 1 tsp black pepper
  • 1.5 tbsp chili powder
  • 3 tsp cumin
  • 1 tsp brown sugar
  • 3 cloves garlic, minced
  • 5 cups milk
  • 4 cups farfalle pasta
  • 1 cup cheddar cheese shredded

Cooking

  • Heat the butter in a large skillet over medium-high heat.
  • Add the sliced chicken and cook for about 5-6 minutes, turning halfway through.
  • Remove the chicken and set it aside.
  • In the same skillet, add sliced bell peppers and onion, sauté until soft, about 5-6 minutes.
  • Return the cooked chicken to the skillet and season with salt, black pepper, chili powder, cumin, brown sugar, and garlic.
  • Stir until well-coated with the spices.
  • Pour in the milk and add the farfalle pasta.
  • Increase the heat to bring to a boil. Reduce heat and let it simmer for about 20 minutes until the pasta is tender.
  • Sprinkle cheddar cheese on top and mix until melted.

Notes

Garnish with fresh herbs like cilantro or parsley. Serve with tortilla chips, sour cream, or lime juice for added flavor.
