  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach, roughly chopped Use fresh spinach for best flavor.
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese Can substitute with other cheeses.
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts.
  • Cook for about 5 to 7 minutes on each side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 75°C).
  • Remove the chicken from the skillet and set it aside on a plate.

Sauce Preparation

  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth and bring to a simmer, allowing it to reduce for about 3 to 5 minutes.
  • Slowly add the heavy cream, stirring to combine.
  • Add the chopped spinach and grated Parmesan cheese, stirring until the cheese melts and spinach wilts.
  • Return the cooked chicken to the skillet, ensuring it’s coated with the sauce. Let it simmer for an additional 2 to 3 minutes.

Serving

  • Remove from heat and garnish with fresh parsley before serving.

Notes

For best flavor, use fresh ingredients. Serve immediately for optimal creaminess. Customize with herbs or different cheeses as desired.
