  • 12 oz gluten-free farfalle pasta
  • 3 cups heavy cream
  • 12 oz shredded Parmesan

Seasoning Mix

  • 1.5 tsp paprika OliveNation
  • 1.5 tsp oregano
  • 1 tsp garlic powder OliveNation
  • 0.5 tsp thyme
  • 0.5 tsp black pepper
  • 1 tsp salt

Additional Ingredients

  • 2 tbsp olive oil Costabile Brand
  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 0.5 cup chicken broth
  • 2 tbsp Gluten Free 1:1 flour
  • 0.25 cup pasta water
  • 0.5 tsp salt
  • 1 tsp garlic powder

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil and cook the gluten-free farfalle pasta according to package instructions until al dente.
  • In a small bowl, combine the paprika, oregano, garlic powder, thyme, salt, and black pepper to make a seasoning mix.
  • Flatten the chicken breasts with a meat mallet and season both sides with the spice mix.

Cooking Chicken

  • Heat olive oil in a large skillet over medium heat and sauté the seasoned chicken for about 5 minutes on each side, or until golden brown.
  • Lower the heat to medium-low, cover, and cook for an additional 10-12 minutes until the internal temperature reaches 165°F.
  • Transfer chicken to a cutting board, cover it, and let it rest.

Making the Sauce

  • In the same skillet, reduce the heat further and add butter until melted.
  • Add dry shallots, garlic powder, and Italian seasoning into the melted butter, stirring for about a minute.
  • Sprinkle in the gluten-free flour and whisk to incorporate, scraping stuck bits from the pan.
  • Add chicken broth and heavy cream, whisking continuously until a smooth sauce forms.
  • Gradually stir in the shredded Parmesan cheese until melted and the sauce thickens.

Combining Pasta and Chicken

  • Once the pasta has finished cooking, drain it and reserve 1/4 cup of pasta water.
  • Add the drained pasta to the skillet with the sauce, tossing to coat evenly.
  • If the sauce is too thick, add reserved pasta water one tablespoon at a time until desired consistency.
  • Slice the cooked chicken and gently stir it into the pasta.

Serving

  • Plate the pasta and top with sliced chicken. Garnish with parsley or basil, if desired.
  • Serve with a side salad or garlic bread for a complete meal.

Notes

Use fresh ingredients for best flavor. Adjust seasonings to taste, and reserve pasta water to help achieve the perfect sauce consistency.
