Ingredients
  

For the Chicken

  • 1 lb chicken breast, cut into bite-sized pieces Fresh and preferably organic for best results
  • 2 tbsp soy sauce Adjust for gluten-free with tamari or coconut aminos
  • 1 tbsp cornstarch To help tenderize and coat the chicken
  • 2 tbsp vegetable oil For cooking the chicken

For the Sauce

  • 4 cloves garlic, minced Freshly minced for best flavor
  • 1 tbsp fresh ginger, minced Adds depth to the sauce
  • 1/4 cup chicken broth Use low-sodium if preferred
  • 2 tbsp rice vinegar For tanginess
  • 1 tbsp sugar Balances the flavors
  • Salt and pepper to taste Salt and pepper, to taste
  • Green onions for garnish Green onions, chopped For serving

Instructions
 

Preparation

  • Begin by placing your bite-sized chicken pieces into a bowl. Drizzle in soy sauce and sprinkle with cornstarch, mixing until well coated. Allow to marinate for about 15 minutes.

Cooking

  • Heat vegetable oil in a pan over medium-high heat. Add marinated chicken and sauté until golden brown and crispy, about 6 to 8 minutes. Remove the chicken and set aside.
  • In the same pan, add minced garlic and ginger. Sauté for about 30 seconds or until fragrant, being careful not to burn the garlic.
  • Pour in chicken broth, rice vinegar, and sugar. Stir to combine and let the sauce simmer for a few minutes to thicken slightly.
  • Return the crispy chicken to the pan, tossing in the sauce until well coated. Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator, or freeze for up to 2 months. Reheat gently, adding a splash of broth if needed.
