Ingredients
  

For the Chicken

  • 4 pieces chicken breasts
  • 1/2 cup unsalted butter, softened Make sure it's not melted
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon lemon juice
  • to taste Salt and pepper

Breading Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups bread crumbs
  • as needed Oil, for frying Use enough to cover the bottom of the pan

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the softened butter, minced garlic, chopped parsley, chopped dill, lemon juice, and a sprinkle of salt and pepper until smooth.
  • Use a meat mallet to gently flatten each chicken breast to about half an inch thick.
  • Place a generous portion of the butter mixture in the center of each chicken breast.
  • Roll up each chicken breast, sealing the butter inside, and secure with toothpicks if necessary.

Breading

  • Set up three bowls: one with flour, one with beaten eggs, and one with bread crumbs.
  • Coat each chicken roll in flour, then dip into the beaten eggs, allowing excess to drip off, and finally roll in bread crumbs.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Fry each chicken roll until golden brown on all sides, about 2-3 minutes per side.
  • Transfer the fried chicken rolls to a baking dish and bake for about 15-20 minutes, or until the internal temperature reaches 165°F (74°C).

Serving

  • Let the Chicken Kiev rest for a few minutes before serving.
  • Garnish with parsley or dill and serve with lemon wedges and your choice of side dishes.

Notes

Chicken Kiev can be prepared in advance and stored. Allow to rest after frying to keep moist. Serve with a variety of sides like mashed potatoes or salads.
