  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces Use fresh chicken for best flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

For the Base

  • 4 cups mashed potatoes (store-bought or homemade) Homemade is preferred for best taste.
  • 1 cup corn kernels (canned or frozen) If using frozen, cook according to package instructions.
  • 1 cup shredded cheddar cheese Feel free to substitute with other cheese types.
  • 1 cup prepared gravy (chicken or brown) Use homemade or store-bought.
  • Chopped fresh parsley for garnish (optional)

Preparation

  • In a medium-sized bowl, combine the bite-sized chicken pieces with garlic powder, onion powder, paprika, salt, and pepper. Mix thoroughly to coat the chicken evenly with the spices.

Cooking

  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces to the skillet and cook for about 7-9 minutes, turning occasionally, until browned and fully cooked through. The internal temperature should reach 165°F (75°C). Remove the chicken from the skillet and set it aside.
  • In a medium saucepan, heat the prepared gravy according to package instructions or your homemade recipe. Keep warm on low heat.
  • Prepare the corn. If you’re using frozen corn, cook it according to the package instructions until heated through. If using canned corn, simply drain it and warm it in a small saucepan over low heat.
  • Reheat the mashed potatoes until smooth and hot if homemade, or follow the package instructions if store-bought.

Assembly

  • To build the chicken mashed potato bowls, start by placing a generous scoop of mashed potatoes at the bottom of each serving bowl.
  • Top the mashed potatoes with a portion of warm corn, then add a sufficient amount of the cooked chicken on top.
  • Pour warm gravy over the chicken and potatoes, allowing it to soak in. Finally, sprinkle shredded cheddar cheese on top, letting it melt slightly.
  • Garnish with chopped fresh parsley if desired and serve immediately.
