Ingredients
  

For the Soup

  • 2 tablespoons avocado oil or olive oil Use whichever oil is preferred.
  • 1 medium white or yellow onion, sliced into thin vertical strips Sliced onions enhance flavor.
  • 1.25 cups peeled and thinly sliced or julienned carrots Carrots bring sweetness and color.
  • 1.25 cups thinly sliced celery Adds crunchy texture.
  • 8 oz sliced cremini mushrooms Approximately 2 ½ cups.
  • 1 clove garlic, peeled and thinly sliced
  • 1 tablespoon peeled and thinly julienned ginger Adds warmth and depth.
  • 8 cups low-sodium chicken broth, divided Essential for a flavorful soup.
  • 2 tablespoons white miso paste Brings rich umami flavor.
  • 2.5 cups shredded chicken (breast and/or thigh meat) Use cooked chicken for convenience.
  • 2 teaspoons toasted sesame oil Enhances the flavor profile.
  • 1 tablespoon rice vinegar Add to taste for tang.
  • to taste Additional salt Optional, depending on broth saltiness.
  • Sliced green onions and/or cilantro for garnish Optional garnish for freshness.

Instructions
 

Preparation

  • Gather all ingredients before starting.
  • Preheat a Dutch oven or large stock pot over medium-high heat.
  • Add the avocado oil or olive oil to the pot.

Cooking

  • Toss in the sliced onions, carrots, celery, mushrooms, garlic, and ginger.
  • Sauté for about 6 to 7 minutes, stirring frequently until the onions soften.
  • Stir in all but 1 cup of the chicken broth and bring to a boil.
  • Reduce heat to medium and let simmer for 8 to 10 minutes.
  • In a small bowl, heat the reserved chicken broth in the microwave for about 1 minute.
  • Add the miso paste to the hot broth and whisk until fully dissolved.
  • Add the shredded chicken and the cup of miso broth to the pot, cooking on medium heat for 1 to 2 minutes.
  • Pour in the toasted sesame oil and rice vinegar, then taste and add salt if needed.

Serving

  • Serve the soup hot, garnished with sliced green onions or cilantro.

Notes

For variations, consider adding different vegetables, spice, noodles, or tofu. Optimal flavor comes from using fresh ingredients and allowing adequate simmering time.
