  • 4 pieces chicken breasts Boneless, skinless
  • 1 cup breadcrumbs
  • 1 cup flour
  • 2 pieces eggs Beaten
  • 2 cups marinara sauce Use fresh if possible
  • 2 cups shredded mozzarella cheese Shred fresh for better melting
  • 4 slices garlic bread Store-bought or homemade
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper.
  • Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in the third.
  • Coat each chicken breast in flour, dip it into the beaten eggs, then dredge in breadcrumbs.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Carefully fry the breaded chicken breasts for 4-5 minutes per side until golden brown.
  • Transfer the fried chicken breasts to a baking sheet lined with parchment paper.
  • Pour marinara sauce over each piece of chicken and sprinkle shredded mozzarella on top.
  • Bake in the preheated oven for 10-15 minutes until the cheese is bubbly and golden.
  • Toast garlic bread according to package instructions.

Assembly

  • Assemble the sandwiches by placing a piece of cheesy chicken on a slice of garlic bread and topping with another slice.

Notes

For the best flavor, use fresh ingredients and double bread the chicken for extra crunch. Serve with a side of mixed greens or a light salad.
