  • 8 oz pasta (fettuccine or penne)
  • 1 lb chicken breast, diced
  • 1 cup pesto sauce Fresh or store-bought
  • 1 cup heavy cream Can substitute with Greek yogurt or plant-based cream for lighter version
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Fresh basil, for garnish

Preparation

  • Start by boiling a pot of salted water. Once it reaches a rolling boil, add your choice of pasta—fettuccine or penne. Cook until al dente, approximately 8-10 minutes, then drain.
  • In a large skillet over medium heat, add a splash of olive oil. Add the diced chicken breast, seasoning with salt and pepper. Sauté for about 5-7 minutes until the chicken is golden brown and cooked through.
  • Reduce the heat to low, then pour in the pesto sauce and heavy cream. Stir to thoroughly coat the chicken in the sauce.
  • Add the drained pasta to the skillet, tossing to ensure it is evenly coated with the sauce. Stir in the grated Parmesan cheese until it melts into the dish.
  • Serve by spooning onto plates, garnished with fresh basil leaves.

Notes

This dish can be served with a side salad or garlic bread. Make it uniquely yours by adding seasonal vegetables or experimenting with different proteins.
