  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for searing)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt and black pepper on both sides.
  • In an oven-safe skillet, heat a tablespoon of olive oil over medium heat.
  • Carefully place the chicken breasts in the skillet and sear them until golden-brown, about 5-6 minutes per side.
  • Remove the chicken from the skillet and set it aside.

Sauce Preparation

  • In the same skillet, sauté the minced garlic until fragrant, being careful not to burn it.
  • Add the fresh lemon juice and lemon zest to the skillet, stirring to combine.

Cooking

  • Return the seared chicken to the skillet and generously spoon the zesty garlic mixture over the top.
  • Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Once done, sprinkle chopped parsley over the chicken and drizzle remaining sauce from the skillet on top before serving.

Notes

For best results, allow chicken to reach room temperature before cooking. To enhance flavors, consider marinating the chicken before cooking.
