Ingredients
  

For the Chicken Satay

  • 1 lb chicken breast, cut into strips Use boneless chicken breast for best results.
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon curry powder
  • 1/2 teaspoon garlic powder

For the Thai Peanut Sauce

  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • as needed water Water to thin if necessary Add to achieve desired consistency.

Instructions
 

Preparation

  • In a mixing bowl, combine soy sauce, vegetable oil, brown sugar, lime juice, curry powder, and garlic powder. Whisk until smooth.
  • Add the chicken strips to the marinade and ensure they are well-coated. Cover and marinate in the fridge for at least 30 minutes.
  • After marinating, thread the chicken onto skewers securely.

Grilling

  • Preheat your grill or a grill pan over medium-high heat.
  • Grill the chicken skewers for about 5 to 7 minutes on each side or until fully cooked, reaching an internal temperature of 165°F (75°C).

Peanut Sauce Preparation

  • In a separate bowl, mix together the peanut butter, soy sauce, lime juice, brown sugar, and sesame oil. Whisk until smooth.
  • Thin the sauce with water if too thick.

Serving

  • Once grilled, remove chicken from skewers and serve warm alongside the peanut sauce.

Notes

For variations, consider different proteins or vegetable skewers. Garnish with lime wedges or chopped peanuts for added flavor.
