  • 2 cups water

Preparation

  • Season the chicken breasts generously with salt and pepper.
  • Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken breasts to the skillet.
  • Cook the chicken until golden brown and no longer pink inside, approximately 6-7 minutes on each side. Remove and set aside.
  • In the same skillet, add minced garlic and sauté for about one minute until fragrant.
  • Pour in the chicken broth and lemon juice, letting the mixture come to a gentle simmer to deglaze the skillet.
  • Stir in the heavy cream and grated parmesan cheese until fully melted and combined.

Cooking Rice

  • Prepare the rice according to package instructions, typically boiling water, adding rice, and simmering until tender.

Combining and Serving

  • Slice the cooked chicken and return it to the skillet with the creamy sauce. Stir gently to coat the chicken.
  • Serve by placing a scoop of garlic parmesan rice on each plate, topping it with the creamy chicken, and garnishing with parsley.
  • Optionally, add lemon wedges for guests to squeeze over their servings.

Notes

For a lighter version, substitute heavy cream with Greek yogurt or a plant-based alternative. For extra veggies, consider bell peppers, asparagus, or zucchini. Adjust seasonings to personal preference.
