  • 1 lb chicken breast Use boneless and skinless for convenience.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth Homemade broth enhances flavor.
  • 1 packet taco seasoning
  • 1 bell pepper, diced
  • to taste Salt and pepper Adjust to your preference.
  • to taste Chopped cilantro for garnish Fresh cilantro enhances flavor.

Preparation

  • In a large pot, heat a little oil over medium heat. Once the oil is hot, add the diced onion and bell pepper. Sauté the vegetables until they soften, about 5 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the chicken breast, black beans, corn, diced tomatoes, chicken broth, and taco seasoning into the pot. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to let it simmer for 20 to 30 minutes until the chicken is fully cooked.
  • Remove the chicken breast from the pot, shred it, and return it back to the soup.
  • Stir everything together and season with salt and pepper to taste.
  • Serve hot, garnished with cilantro and optional toppings like sour cream and cheese.

Notes

Allow the soup to sit for a while to deepen flavors. Perfect for batch cooking and freezing for later meals.
