  • 2 cans canned chickpeas, drained and rinsed You can use dried chickpeas if preferred.
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • to taste salt and pepper
  • 2 tablespoons olive oil

Optional Toppings

  • 1 avocado Sliced, for serving.
  • cilantro Chopped, for serving.
  • 1 lime Cut into wedges, for serving.

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and bell pepper; sauté until soft, about 5 minutes.
  • Stir in the minced garlic and cook for another minute until aromatic.

Cooking

  • Add chili powder and cumin; cook for 1 minute to activate flavors.
  • Pour in the diced tomatoes and tomato sauce, mixing thoroughly.
  • Stir in the drained chickpeas and combine well.
  • Bring to a gentle simmer and cook for 15-20 minutes, stirring occasionally.
  • Season with salt and pepper to taste before serving.

Notes

Serve with optional toppings like avocado, cilantro, and lime for added flavor. You can also set up a chili bar with various toppings for gatherings.
