  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup maple syrup Or substitute with agave nectar or honey.
  • 1/4 cup almond butter Can substitute with other nut or seed butters.
  • 1/2 teaspoon vanilla extract

Optional Add-Ins

  • 1/2 cup chocolate chips or dried fruits Optional for added flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine chickpea flour, baking soda, and salt. Whisk until well mixed.
  • In a separate bowl, mix together maple syrup, almond butter, and vanilla extract until smooth.
  • Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  • Fold in chocolate chips or dried fruits, if using.
  • Scoop spoonfuls of dough onto a lined baking sheet, leaving space for spreading.

Baking

  • Bake in the preheated oven for 10-12 minutes until edges are golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes

For variety, try adding cinnamon, chocolate chips, or substituting almond butter. Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
