  • 1/2 cup nut butter (such as almond or peanut butter) Substitute for allergen-free options if needed.
  • 1/4 cup maple syrup or agave syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup oats (gluten-free if necessary)
  • 1/2 cup chocolate chips or dried fruit (optional) For added sweetness or texture.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a food processor, blend the drained chickpeas until smooth.
  • Add the nut butter, maple syrup, vanilla extract, baking soda, and salt to the blended chickpeas. Process until mixed well.
  • Stir in the oats and any optional ingredients like chocolate chips or dried fruit using a spatula or a wooden spoon.
  • Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about two inches apart.

Baking

  • Bake for 10-12 minutes or until the cookies turn golden brown around the edges.
  • Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For variations, consider adding spices like cinnamon or ginger, or different nut butters. Store cookies in an airtight container for optimal freshness.
