  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can coconut milk
  • 2 tablespoons Tikka Masala paste
  • 1 cup vegetable broth
  • to taste salt and pepper
  • as needed Fresh cilantro for garnish

Instructions
 

Preparation

  • Heat a large pot over medium heat. Add chopped onion, minced garlic, and grated ginger.
  • Stir occasionally until the onion becomes soft and translucent, about 5 minutes.
  • Stir in the Tikka Masala paste and sauté for an additional minute.
  • Add the rinsed chickpeas, coconut milk, and vegetable broth. Stir until well combined.
  • Increase heat to bring the mixture to a gentle simmer and cook for about 10 minutes, stirring occasionally.
  • Season with salt and pepper to taste.

Serving

  • Plate the Chickpea Vegan Tikka Masala over cooked white rice.
  • Garnish with fresh cilantro.
  • Optional: Serve with naan or whole-grain pita and a side salad.

Notes
