Ingredients
  

Base Ingredients

  • 1 tbsp olive oil For sautéing
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 500 g ground beef Quality ground beef recommended

Tomato Mixture

  • 3 tbsp tomato paste
  • 800 g crushed tomatoes
  • 420 g red kidney beans, drained
  • 2 beef bouillon cubes, crumbled
  • 1.5 tsp sugar Balances flavor
  • ½ to 1.5 cups water (as needed) To adjust thickness

Spices

  • 1-2 tsp cayenne pepper Adjust to taste
  • 4 tsp paprika
  • 5 tsp cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried oregano
  • Salt and black pepper, to taste

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add minced garlic and diced onion, sauté for about 1 minute.
  • Add the diced red bell pepper and cook for an additional 2 minutes.
  • Stir in the ground beef and cook until browned and slightly crisp.

Cooking

  • Toast spices: add cayenne, paprika, cumin, garlic powder, onion powder, and oregano to the pot.
  • Stir continuously for 1-2 minutes until aromatic.
  • Incorporate tomato paste and crushed tomatoes, followed by kidney beans and crumbled bouillon cubes.
  • Stir in sugar and add ½ cup of water.
  • Bring the mixture to a gentle simmer, cooking for 20-40 minutes, adding more water as needed.
  • Season with salt and black pepper to taste before serving.

Notes

Best served hot with rice, tortilla chips, or warm tortillas. Top with sour cream, cheese, cilantro, or jalapeños for added flavor.
