Preparation of Marinade

  • In a mixing bowl, combine the juice of two fresh limes, honey, chili powder, and garlic powder. Season with salt and pepper to taste.
  • Mix well until all ingredients are fully combined.

Marinating the Chicken

  • Add the chicken thighs to the marinade, ensuring they are well-coated.
  • Cover the bowl and let it rest in the refrigerator for at least 30 minutes, or longer for more flavor.

Cooking the Chicken

  • Preheat your air fryer or grill to medium heat. If using a skillet, heat olive oil over medium-high heat.
  • Sear the marinated chicken thighs for about 3-4 minutes on each side until golden brown.
  • Transfer the chicken to your air fryer or grill and cook for approximately 20 minutes or until fully cooked, reaching an internal temperature of 165°F (75°C).
  • Brush the chicken with reserved marinade during the last few minutes of cooking for added flavor.

Serving the Dish

  • Let the chicken rest for a few minutes before serving to allow the juices to redistribute.
