  • 1 unit lime (juiced) freshly squeezed for best flavor

For Assembling Tacos

  • 4 pieces taco shells soft or hard shells
  • 1 cup pineapple salsa for topping

Preparation

  • In a mixing bowl, combine the olive oil, lime juice, chili powder, cumin, and salt. Whisk together until well blended.
  • Immerse the chicken breasts in the marinade, ensuring they are thoroughly coated. Allow to marinate for at least 30 minutes, preferably longer for enhanced flavor.

Cooking Chicken

  • Preheat your grill to medium-high heat, or heat a bit of olive oil in a skillet over medium heat.
  • Cook the chicken for 6-8 minutes on each side or until the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the heat and let it rest for a few minutes before slicing or shredding.

Assembling Tacos

  • Take the taco shells and fill them with the sliced or shredded chicken.
  • Top with a generous scoop of pineapple salsa and serve immediately with lime wedges.

Notes
